Charcoal Mellowing, or what we like to call "the extra blessing," is the old-time process Mr. Jack insisted on using and that the Jack Daniel Distillery uses today. Every ounce of Jack Daniel's Tennessee Whiskey passes through this important step, slowly mellowing, drop by drop, through ten feet of hard sugar maple charcoal.
